Cupcake Outing #2

Can a Cupcake ever be too rich or too big?? Well, I never thought I'd say this, but yes & yes!!

They were huge & really rich! It seriously took two days for us to finish them.
We're skipping this weeks Cupcake outing, I think I'm still full from last weeks trip. I found two website's that have some of the best, easy to follow cupcake recipes. They seem very do-able, even for someone who might not be the best baker{that would be me}. Cupcakerecipes.com and Easy-cake-recipes.com.

But before we can start baking cupcakes from scratch, I think I really need this:

Cupcakes♥

We love cooking/baking/food Shows. Our new favorite Cupcake Wars! I love that there are Cupcake Shops, not bakeries with a few cupcakes~ but actual shops where you can go just for Cupcakes! I looked up local Cupcake Shops{not hard to find, they seem to be popping up everywhere} and decided we'd visit one a week this summer :)
We started here: Frosted Cupcakery in Belmont Shore.

Holiday Traditions

There are certain things my kids look forward to doing every holiday season. Making Christmas Cookies, building Ginger Bread Houses and decorating the Tree. This year I thought it would be a good idea to use a Ginger Bread kit~ well, it seemed like a good idea when I spotted it while in line at the Craft Store. I realized why my kids loved making Ginger Bread houses so much, because they can spend the next week picking it apart & eating it. They quickly realized that wasn't going to happen with this years house...because the next morning it was as hard as a rock! Here's a picture of our sad little house, I added some snow hoping it would help~ it didn't!

Here's my daughter with her Ginger Bread house from last year. I set up spots around the table so each one of my kids could make their own. Did you know that Graham Crakers don't come in the long pieces anymore?? now they're half the size...I found that out last year when I was buying all of the supplies for the Ginger Bread(Graham Cracker)houses. That's why her house looks like a little Adobe house. Next year we'll go back to making our own.

Too hot to cook!

When it's too hot to cook, this has always been my favorite dish to put together. You do have to cook the meat, but what I mean by too hot to cook is too hot to turn on the oven~ which is a 1940's O'Keefe & Merritt. Without even turning it on, it gives off heat.... so turning on the oven on a hot day can be miserable!
This is a healthier version of the Mexican Salad that I usually make.
You can add whatever you like: Salsa, olives, cheese, chips, meat, beans, sour cream, tomato....
I substituted a few things: Turkey instead of meat, fat free sour cream instead of regular, kidney/pinto beans instead of refried beans and baked nacho cheese tortilla chips instead of the regular ones.
You just: layer, repeat, layer, repeat....




It' quick, simple & my kids will eat it~ that's probably why it's one of my favorite dishes!
